Vegan Eggplant Parmesan

Ingredients

  • 2 large eggplants, sliced into rounds
  • 1 cup breadcrumbs
  • 1 cup vegan parmesan cheese
  • 2 cups marinara sauce
  • 1 cup dairy-free mozzarella cheese, shredded
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the eggplant rounds in a colander and sprinkle with salt. Let them sit for 15 minutes to release excess moisture.
  3. Rinse the eggplant rounds and pat them dry with paper towels.
  4. In a shallow dish, combine the breadcrumbs, vegan parmesan cheese, salt, and pepper.
  5. Dip each eggplant round into the breadcrumb mixture, coating both sides evenly.
  6. In a large skillet, heat the olive oil over medium heat. Fry the eggplant rounds in batches until golden brown on both sides. Transfer to a paper towel-lined plate to drain excess oil.
  7. In a baking dish, spread a thin layer of marinara sauce. Arrange a layer of fried eggplant rounds on top of the sauce.
  8. Sprinkle with dairy-free mozzarella cheese and chopped basil. Repeat the layers until all the ingredients are used, ending with a layer of marinara sauce and cheese on top.
  9. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  10. Let the vegan eggplant parmesan cool for a few minutes before serving. Garnish with fresh basil and vegan parmesan cheese, if desired.
