Vegan Eggplant Parmesan

Ingredients
- 2 large eggplants, sliced into rounds
- 1 cup breadcrumbs
- 1 cup vegan parmesan cheese
- 2 cups marinara sauce
- 1 cup dairy-free mozzarella cheese, shredded
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Preheat the oven to 375°F (190°C).
- Place the eggplant rounds in a colander and sprinkle with salt. Let them sit for 15 minutes to release excess moisture.
- Rinse the eggplant rounds and pat them dry with paper towels.
- In a shallow dish, combine the breadcrumbs, vegan parmesan cheese, salt, and pepper.
- Dip each eggplant round into the breadcrumb mixture, coating both sides evenly.
- In a large skillet, heat the olive oil over medium heat. Fry the eggplant rounds in batches until golden brown on both sides. Transfer to a paper towel-lined plate to drain excess oil.
- In a baking dish, spread a thin layer of marinara sauce. Arrange a layer of fried eggplant rounds on top of the sauce.
- Sprinkle with dairy-free mozzarella cheese and chopped basil. Repeat the layers until all the ingredients are used, ending with a layer of marinara sauce and cheese on top.
- Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let the vegan eggplant parmesan cool for a few minutes before serving. Garnish with fresh basil and vegan parmesan cheese, if desired.
