Vegan Falafel With Tahini Sauce

Ingredients

  • 2 cups cooked chickpeas
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/4 tsp cayenne pepper
  • Salt and pepper to taste
  • 1/4 cup chickpea flour
  • 2-3 tbsp olive oil

Instructions

  1. In a food processor, combine the chickpeas, onion, garlic, parsley, cumin, coriander, cayenne pepper, salt, and pepper. Pulse until the mixture is finely chopped but not pureed.
  2. Transfer the mixture to a bowl and stir in the chickpea flour. The mixture should be thick enough to form into balls. If it's too wet, add more flour.
  3. Form the mixture into 12 small balls and flatten slightly to form patties.
  4. Heat the olive oil in a large skillet over medium heat. Cook the falafel patties for 3-4 minutes on each side, until golden brown and crispy.
  5. Remove the falafel from the skillet and place on a paper towel to drain any excess oil.
