Ingredients
- 2 cups cooked chickpeas
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 1/4 cup chickpea flour
- 2-3 tbsp olive oil
Instructions
- In a food processor, combine the chickpeas, onion, garlic, parsley, cumin, coriander, cayenne pepper, salt, and pepper. Pulse until the mixture is finely chopped but not pureed.
- Transfer the mixture to a bowl and stir in the chickpea flour. The mixture should be thick enough to form into balls. If it's too wet, add more flour.
- Form the mixture into 12 small balls and flatten slightly to form patties.
- Heat the olive oil in a large skillet over medium heat. Cook the falafel patties for 3-4 minutes on each side, until golden brown and crispy.
- Remove the falafel from the skillet and place on a paper towel to drain any excess oil.
