Vegan Gumbo
Vegan gumbo is a flavorful and hearty stew that originates from Louisiana. This plant-based version of the classic dish is packed with vegetables, protein-rich beans, and aromatic spices, making it a satisfying and nutritious meal for any occasion.
Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 1 green bell pepper, chopped
- 2 celery stalks, diced
- 1 cup okra, sliced
- 1 can (15 oz) diced tomatoes
- 4 cups vegetable broth
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 bay leaves
- 1 teaspoon paprika
- 1/2 teaspoon thyme
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 3 cups cooked rice, for serving
- Fresh parsley, for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, bell pepper, and celery. Cook until the vegetables are softened, about 5 minutes.
- Add the okra, diced tomatoes, vegetable broth, kidney beans, chickpeas, bay leaves, paprika, thyme, and cayenne pepper. Season with salt and pepper.
- Bring the gumbo to a boil, then reduce the heat and let it simmer for 45 minutes, stirring occasionally.
- Remove the bay leaves and adjust the seasoning if needed.
- Serve the vegan gumbo over cooked rice and garnish with fresh parsley.
