Vegan Gumbo

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 green bell pepper, chopped
  • 2 celery stalks, diced
  • 1 cup okra, sliced
  • 1 can (15 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 bay leaves
  • 1 teaspoon paprika
  • 1/2 teaspoon thyme
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 3 cups cooked rice, for serving
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, bell pepper, and celery. Cook until the vegetables are softened, about 5 minutes.
  2. Add the okra, diced tomatoes, vegetable broth, kidney beans, chickpeas, bay leaves, paprika, thyme, and cayenne pepper. Season with salt and pepper.
  3. Bring the gumbo to a boil, then reduce the heat and let it simmer for 45 minutes, stirring occasionally.
  4. Remove the bay leaves and adjust the seasoning if needed.
  5. Serve the vegan gumbo over cooked rice and garnish with fresh parsley.
