Vegan Lentil Sloppy Joes

Ingredients

  • 1 cup dried green lentils
  • 3 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) tomato sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 whole grain burger buns

Instructions

  1. Rinse the lentils and place them in a pot with the vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the lentils are tender.
  2. In a separate pan, heat the olive oil over medium heat. Add the onion, garlic, and bell pepper, and sauté until softened.
  3. Stir in the cooked lentils, tomato sauce, tomato paste, maple syrup, Dijon mustard, apple cider vinegar, chili powder, smoked paprika, salt, and pepper. Simmer for 5-10 minutes.
  4. Toast the burger buns and spoon the lentil mixture onto the buns to serve.
