Vegan Lentil Sloppy Joes

Ingredients
- 1 cup dried green lentils
- 3 cups vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) tomato sauce
- 2 tablespoons tomato paste
- 2 tablespoons maple syrup
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 4 whole grain burger buns
Instructions
- Rinse the lentils and place them in a pot with the vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the lentils are tender.
- In a separate pan, heat the olive oil over medium heat. Add the onion, garlic, and bell pepper, and sauté until softened.
- Stir in the cooked lentils, tomato sauce, tomato paste, maple syrup, Dijon mustard, apple cider vinegar, chili powder, smoked paprika, salt, and pepper. Simmer for 5-10 minutes.
- Toast the burger buns and spoon the lentil mixture onto the buns to serve.
