Vegan Portobello Mushroom Burgers

Ingredients

  • 4 large portobello mushrooms
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 4 whole grain burger buns
  • Lettuce, tomato, onion, and condiments of choice for serving

Instructions

  1. Remove the stems from the portobello mushrooms and place them in a shallow dish.
  2. In a small bowl, whisk together the balsamic vinegar, olive oil, garlic, salt, and pepper. Pour the marinade over the mushrooms, turning to coat. Let marinate for 10 minutes, turning once.
  3. Heat a stovetop grill pan or skillet over medium heat. Place the mushrooms on the hot pan, reserving the marinade for basting. Cook for 5-7 minutes on each side, or until tender, brushing with the marinade frequently.
  4. Toast the burger buns on the grill pan until lightly browned.
  5. Assemble the burgers by placing a mushroom on each bun, along with lettuce, tomato, onion, and your favorite condiments.
