Vegan Portobello Mushroom Burgers

Ingredients
- 4 large portobello mushrooms
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- 4 whole grain burger buns
- Lettuce, tomato, onion, and condiments of choice for serving
Instructions
- Remove the stems from the portobello mushrooms and place them in a shallow dish.
- In a small bowl, whisk together the balsamic vinegar, olive oil, garlic, salt, and pepper. Pour the marinade over the mushrooms, turning to coat. Let marinate for 10 minutes, turning once.
- Heat a stovetop grill pan or skillet over medium heat. Place the mushrooms on the hot pan, reserving the marinade for basting. Cook for 5-7 minutes on each side, or until tender, brushing with the marinade frequently.
- Toast the burger buns on the grill pan until lightly browned.
- Assemble the burgers by placing a mushroom on each bun, along with lettuce, tomato, onion, and your favorite condiments.
