Vegan Quinoa Stuffed Tomatoes

Ingredients

  • 4 large tomatoes
  • 1 cup quinoa, rinsed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the tomatoes and scoop out the seeds and pulp. Place the hollowed tomatoes in a baking dish and set aside.
  3. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the water is absorbed.
  4. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  5. Add the bell pepper and zucchini to the skillet, and cook until the vegetables are tender.
  6. Stir in the cooked quinoa, dried oregano, dried basil, salt, and pepper. Cook for an additional 2-3 minutes to allow the flavors to meld.
  7. Spoon the quinoa mixture into the hollowed tomatoes, packing it in tightly. Place the tops back on the tomatoes.
  8. Bake for 20-25 minutes, or until the tomatoes are tender.
  9. Garnish with fresh parsley before serving.
