Vegan Quinoa Stuffed Tomatoes
These Vegan Quinoa Stuffed Tomatoes are a delicious and healthy dish that's perfect for a light lunch or dinner. The combination of quinoa, vegetables, and flavorful seasonings makes for a satisfying and nutritious meal.
Ingredients
- 4 large tomatoes
- 1 cup quinoa, rinsed
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the tomatoes and scoop out the seeds and pulp. Place the hollowed tomatoes in a baking dish and set aside.
- In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the water is absorbed.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the bell pepper and zucchini to the skillet, and cook until the vegetables are tender.
- Stir in the cooked quinoa, dried oregano, dried basil, salt, and pepper. Cook for an additional 2-3 minutes to allow the flavors to meld.
- Spoon the quinoa mixture into the hollowed tomatoes, packing it in tightly. Place the tops back on the tomatoes.
- Bake for 20-25 minutes, or until the tomatoes are tender.
- Garnish with fresh parsley before serving.
