Vegan Roasted Red Pepper Pasta

Ingredients
- 12 oz (340g) of your favorite pasta
- 2 large red bell peppers
- 1 cup raw cashews, soaked in water for 4 hours or overnight
- 1/2 cup unsweetened almond milk
- 2 cloves garlic, minced
- 2 tablespoons nutritional yeast
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 425°F (220°C). Place the whole red bell peppers on a baking sheet and roast for 25-30 minutes, turning occasionally, until the skins are charred and blistered.
- Remove the peppers from the oven and transfer them to a bowl. Cover the bowl with plastic wrap and let the peppers steam for 10 minutes. This will make it easier to peel off the skins.
- While the peppers are steaming, cook the pasta according to the package instructions. Drain and set aside.
- Peel the charred skins off the peppers and remove the seeds and stems. Cut the flesh into strips.
- In a blender, combine the soaked cashews, almond milk, garlic, nutritional yeast, lemon juice, and the roasted red peppers. Blend until smooth and creamy. Season with salt and pepper to taste.
- In a large pan, combine the cooked pasta and the roasted red pepper sauce. Cook over medium heat, stirring gently, until the sauce is heated through and coats the pasta evenly.
- Divide the pasta into serving bowls, garnish with fresh basil, and serve hot.
