Ingredients
- 2 cups dried green or brown lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 tsp smoked paprika
- 1 tsp cumin
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Rinse the lentils and set aside.
- In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.
- Add the lentils, diced tomatoes, vegetable broth, smoked paprika, cumin, salt, and pepper to the pot. Stir to combine.
