Vegan Smoky Lentil Stew

Ingredients

  • 2 cups dried green or brown lentils
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Rinse the lentils and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and red bell pepper. Cook until softened, about 5 minutes.
  3. Add the lentils, diced tomatoes, vegetable broth, smoked paprika, cumin, salt, and pepper to the pot. Stir to combine.
