Vegan Spicy Thai Tofu Curry

Ingredients
- 1 block of firm tofu, drained and cubed
- 2 tablespoons of red curry paste
- 1 can of coconut milk
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons of soy sauce
- 1 tablespoon of coconut sugar
- 1 tablespoon of lime juice
- 1 cup of vegetable broth
- Fresh cilantro for garnish
- Cooked rice for serving
Instructions
- Heat a large pan over medium heat and add the cubed tofu. Cook until all sides are golden and crispy. Remove from the pan and set aside.
- In the same pan, add the red curry paste and cook for 1-2 minutes until fragrant.
- Pour in the coconut milk and stir until the curry paste is fully combined.
- Add the sliced bell peppers and onion to the pan, and cook for 5 minutes until slightly softened.
- Pour in the soy sauce, coconut sugar, lime juice, and vegetable broth. Stir to combine.
- Add the crispy tofu back into the pan and let the curry simmer for 10-15 minutes until the vegetables are tender.
- Serve the curry over cooked rice and garnish with fresh cilantro.
