Vegan Spicy Thai Tofu Curry

Ingredients

  • 1 block of firm tofu, drained and cubed
  • 2 tablespoons of red curry paste
  • 1 can of coconut milk
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of coconut sugar
  • 1 tablespoon of lime juice
  • 1 cup of vegetable broth
  • Fresh cilantro for garnish
  • Cooked rice for serving

Instructions

  1. Heat a large pan over medium heat and add the cubed tofu. Cook until all sides are golden and crispy. Remove from the pan and set aside.
  2. In the same pan, add the red curry paste and cook for 1-2 minutes until fragrant.
  3. Pour in the coconut milk and stir until the curry paste is fully combined.
  4. Add the sliced bell peppers and onion to the pan, and cook for 5 minutes until slightly softened.
  5. Pour in the soy sauce, coconut sugar, lime juice, and vegetable broth. Stir to combine.
  6. Add the crispy tofu back into the pan and let the curry simmer for 10-15 minutes until the vegetables are tender.
  7. Serve the curry over cooked rice and garnish with fresh cilantro.
