Vegan Spinach And Artichoke Dip

Ingredients
- 1 cup raw cashews, soaked
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14 oz) artichoke hearts, drained and chopped
- 1 cup frozen spinach, thawed and drained
- 1/4 cup nutritional yeast
- 1/2 cup vegetable broth
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Drain and rinse the soaked cashews.
- In a blender, combine the cashews, nutritional yeast, vegetable broth, and lemon juice. Blend until smooth and creamy.
- Heat olive oil in a skillet over medium heat. Add the diced onion and minced garlic, and sauté until softened.
- Add the chopped artichoke hearts and thawed spinach to the skillet. Cook for a few minutes until heated through.
- Pour the creamy cashew mixture into the skillet and stir to combine with the vegetables. Cook for a few more minutes until the dip is heated through.
- Season with salt and pepper to taste.
