Vegan Spinach And Artichoke Dip

Ingredients

  • 1 cup raw cashews, soaked
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup frozen spinach, thawed and drained
  • 1/4 cup nutritional yeast
  • 1/2 cup vegetable broth
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Drain and rinse the soaked cashews.
  2. In a blender, combine the cashews, nutritional yeast, vegetable broth, and lemon juice. Blend until smooth and creamy.
  3. Heat olive oil in a skillet over medium heat. Add the diced onion and minced garlic, and sauté until softened.
  4. Add the chopped artichoke hearts and thawed spinach to the skillet. Cook for a few minutes until heated through.
