Ingredients
- 8 oz (225g) of your favorite pasta
- 1 cup (150g) sun-dried tomatoes (not in oil)
- 2 cloves of garlic
- 1/2 cup (120ml) extra virgin olive oil
- 1/4 cup (30g) pine nuts
- 1 cup (30g) fresh basil leaves
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Drain and set aside.
- In a food processor, combine the sun-dried tomatoes, garlic, olive oil, pine nuts, and basil. Pulse until smooth, scraping down the sides as needed. Season with salt and pepper to taste.
- Toss the cooked pasta with the sun-dried tomato pesto until well coated.
