Vegan Sun-dried Tomato Pesto Pasta

Ingredients

  • 8 oz (225g) of your favorite pasta
  • 1 cup (150g) sun-dried tomatoes (not in oil)
  • 2 cloves of garlic
  • 1/2 cup (120ml) extra virgin olive oil
  • 1/4 cup (30g) pine nuts
  • 1 cup (30g) fresh basil leaves
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Drain and set aside.
  2. In a food processor, combine the sun-dried tomatoes, garlic, olive oil, pine nuts, and basil. Pulse until smooth, scraping down the sides as needed. Season with salt and pepper to taste.
