Vegan Sweet And Sour Cauliflower

Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 cup of cornstarch
  • 1 tablespoon of vegetable oil
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 cup of pineapple chunks
  • 1/4 cup of ketchup
  • 1/4 cup of rice vinegar
  • 3 tablespoons of agave nectar
  • 2 tablespoons of soy sauce
  • 1 teaspoon of garlic powder
  • 1 teaspoon of ginger, grated
  • Salt and pepper to taste

Instructions

  1. Coat the cauliflower florets in cornstarch.
  2. Heat the vegetable oil in a large pan over medium heat and add the cauliflower. Cook until crispy and golden brown, then remove from the pan and set aside.
  3. In the same pan, add the diced bell peppers and cook for 2-3 minutes.
