Ingredients

  • 3 cups cooked white rice
  • 2 eggs, beaten
  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 1 carrot, diced
  • 1/2 cup frozen peas
  • 2 tablespoons soy sauce
  • 1 tablespoon Vegemite
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large wok or skillet over medium heat.
  2. Add beaten eggs and scramble until cooked. Remove from the wok and set aside.
  3. In the same wok, add a little more oil if needed and sauté the diced onion and carrot until they start to soften.

  5. Stir in the frozen peas, soy sauce, and Vegemite, and continue to cook until the peas are heated through.
  6. Return the scrambled eggs to the wok and toss everything together until well combined.
  7. Season with salt and pepper to taste.
