Ingredients

  • 2 sheets of puff pastry
  • 500g sausage meat
  • 2 tablespoons Vegemite
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 200°C (390°F) and line a baking tray with parchment paper.
  2. Roll out the puff pastry sheets and cut each one in half lengthwise to create 4 long rectangles.
  3. In a bowl, mix the sausage meat and Vegemite until well combined.
  4. Divide the sausage mixture into 4 equal portions and shape each portion into a long sausage shape that matches the length of the pastry.
  5. Place a sausage portion along the length of each pastry rectangle, then brush the edges with a little water and roll the pastry to encase the sausage, pressing the edges to seal.
  6. Cut each long roll into 3 smaller rolls and place them on the prepared baking tray.
  7. Brush the tops of the rolls with the beaten egg to glaze.
  8. Bake in the preheated oven for 25 minutes or until the pastry is golden and the sausage is cooked through.
  9. Allow the sausage rolls to cool slightly before serving.
