Ingredients
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup cauliflower florets
- 1 cup green beans, trimmed
- 1 cup carrots, sliced
- 1 can (14 oz) coconut milk
- 2 tbsp curry powder
- 1 tsp turmeric
- Salt and pepper to taste
- 2 tbsp vegetable oil
- 2 cups cooked rice for serving
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
- Add the curry powder and turmeric to the pot, and stir to coat the onions and garlic.
- Add the sliced red bell pepper, cauliflower florets, green beans, and carrots to the pot. Stir to combine with the onions and spices.
- Pour in the coconut milk and stir well. Season with salt and pepper to taste.
- Simmer the curry for 20-25 minutes, or until the vegetables are tender and the sauce has thickened.
