Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup cauliflower florets
  • 1 cup green beans, trimmed
  • 1 cup carrots, sliced
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • 2 cups cooked rice for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is soft and translucent.
  2. Add the curry powder and turmeric to the pot, and stir to coat the onions and garlic.
  3. Add the sliced red bell pepper, cauliflower florets, green beans, and carrots to the pot. Stir to combine with the onions and spices.
  4. Pour in the coconut milk and stir well. Season with salt and pepper to taste.
