Vegetable Paella (paella De Verduras)

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup green beans, trimmed
  • 1 cup artichoke hearts, quartered
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon smoked paprika
  • 1 teaspoon saffron threads
  • 2 cups short-grain rice
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a paella pan or large skillet over medium heat.
  2. Add the onion and garlic, and sauté until softened.
  3. Stir in the bell peppers, green beans, artichoke hearts, and cherry tomatoes. Cook for 5 minutes.
  4. Sprinkle the smoked paprika and saffron threads over the vegetables, then add the rice and stir to coat.
  5. Pour in the vegetable broth and season with salt and pepper. Bring to a simmer and cook for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let the paella rest for 5 minutes before serving. Garnish with fresh parsley.
