Vegetable Paella (paella De Verduras)
Vegetable Paella, or Paella de Verduras, is a classic dish from the Valencian region of Spain. This vegetarian version of the traditional paella is packed with flavor and showcases the delicious bounty of fresh vegetables.
Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup green beans, trimmed
- 1 cup artichoke hearts, quartered
- 1 cup cherry tomatoes, halved
- 1 teaspoon smoked paprika
- 1 teaspoon saffron threads
- 2 cups short-grain rice
- 4 cups vegetable broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a paella pan or large skillet over medium heat.
- Add the onion and garlic, and sauté until softened.
- Stir in the bell peppers, green beans, artichoke hearts, and cherry tomatoes. Cook for 5 minutes.
- Sprinkle the smoked paprika and saffron threads over the vegetables, then add the rice and stir to coat.
- Pour in the vegetable broth and season with salt and pepper. Bring to a simmer and cook for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let the paella rest for 5 minutes before serving. Garnish with fresh parsley.
