Vegetable Spread, also known as Romanian Zacusca, is a traditional Eastern European dish that is perfect for spreading on bread or crackers. It's a delicious way to enjoy the flavors of roasted vegetables all year round.
Ingredients
- 3 large red bell peppers, roasted and peeled
- 2 eggplants, roasted and peeled
- 4 large tomatoes, roasted and peeled
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 1/4 cup sunflower oil
- Salt and pepper to taste
Instructions
- Roast the bell peppers, eggplants, and tomatoes until the skins are charred. Let them cool, then peel and chop the flesh.
- In a large pot, heat the sunflower oil over medium heat. Add the chopped onions and cook until soft and translucent.
- Add the minced garlic to the pot and cook for another minute.
- Stir in the roasted and chopped vegetables. Season with salt and pepper.
- Cook the mixture over low heat for about 1 hour, stirring occasionally, until it thickens into a spreadable consistency.
- Let the vegetable spread cool, then transfer it to sterilized jars for storage.
