Ingredients

  • 3 large red bell peppers, roasted and peeled
  • 2 eggplants, roasted and peeled
  • 4 large tomatoes, roasted and peeled
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 1/4 cup sunflower oil
  • Salt and pepper to taste

Instructions

  1. Roast the bell peppers, eggplants, and tomatoes until the skins are charred. Let them cool, then peel and chop the flesh.
  2. In a large pot, heat the sunflower oil over medium heat. Add the chopped onions and cook until soft and translucent.
  3. Add the minced garlic to the pot and cook for another minute.
  4. Stir in the roasted and chopped vegetables. Season with salt and pepper.
  5. Cook the mixture over low heat for about 1 hour, stirring occasionally, until it thickens into a spreadable consistency.
  6. Let the vegetable spread cool, then transfer it to sterilized jars for storage.
