Vegetable Stew (pachakari Stew)

Ingredients

  • 2 cups mixed vegetables (carrots, potatoes, green beans, peas)
  • 1 onion, thinly sliced
  • 2 green chilies, slit
  • 1-inch piece ginger, julienned
  • 3-4 cloves garlic, minced
  • 1 can (14 oz) coconut milk
  • 1 tsp black pepper powder
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 2 tbsp coconut oil
  • A few curry leaves

Instructions

  1. Heat coconut oil in a pan and sauté the onions, green chilies, ginger, and garlic until the onions turn translucent.
  2. Add the mixed vegetables and sauté for a few minutes.
  3. Pour in the coconut milk and add the black pepper powder, turmeric powder, and salt. Stir well.
  4. Add the curry leaves and simmer the stew until the vegetables are cooked and the flavors are well combined.
  5. Adjust the seasoning if needed and serve hot with appam or idiyappam.
