Vegetable Stew (pachakari Stew)
Vegetable Stew, also known as Pachakari Stew, is a popular dish from Kerala Cuisine. This flavorful and aromatic stew is made with a variety of vegetables and simmered in a coconut milk-based broth. It is often served with appam or idiyappam, making it a comforting and satisfying meal.
Ingredients
- 2 cups mixed vegetables (carrots, potatoes, green beans, peas)
- 1 onion, thinly sliced
- 2 green chilies, slit
- 1-inch piece ginger, julienned
- 3-4 cloves garlic, minced
- 1 can (14 oz) coconut milk
- 1 tsp black pepper powder
- 1/2 tsp turmeric powder
- Salt to taste
- 2 tbsp coconut oil
- A few curry leaves
Instructions
- Heat coconut oil in a pan and sauté the onions, green chilies, ginger, and garlic until the onions turn translucent.
- Add the mixed vegetables and sauté for a few minutes.
- Pour in the coconut milk and add the black pepper powder, turmeric powder, and salt. Stir well.
- Add the curry leaves and simmer the stew until the vegetables are cooked and the flavors are well combined.
- Adjust the seasoning if needed and serve hot with appam or idiyappam.
