Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1 small onion, diced
- 1 bell pepper, diced
- 1 cup corn kernels
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 8 small corn tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheese (optional)
- 1/4 cup chopped fresh cilantro

Instructions
- In a large skillet, heat some oil over medium heat. Add the diced onion and bell pepper, and cook until softened, about 5 minutes.
- Add the corn and black beans to the skillet, then stir in the cumin, chili powder, garlic powder, salt, and pepper. Cook for another 5 minutes, stirring occasionally.
- Warm the corn tortillas in a separate skillet or in the microwave.
- Assemble the tacos by spooning the black bean mixture onto each tortilla, then topping with shredded lettuce, diced tomatoes, cheese (if using), and cilantro.
- Serve the tacos with lime wedges on the side for squeezing.
