Vegetarian Black Bean Tacos

Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 cup corn kernels
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions

  1. In a large skillet, heat some oil over medium heat. Add the diced onion and bell pepper, and cook until softened, about 5 minutes.
  2. Add the corn and black beans to the skillet, then stir in the cumin, chili powder, garlic powder, salt, and pepper. Cook for another 5 minutes, stirring occasionally.
  3. Warm the corn tortillas in a separate skillet or in the microwave.
  4. Assemble the tacos by spooning the black bean mixture onto each tortilla, then topping with shredded lettuce, diced tomatoes, cheese (if using), and cilantro.
  5. Serve the tacos with lime wedges on the side for squeezing.
