Ingredients
- 12 spring roll wrappers
- 1 cup shredded lettuce
- 1 cup shredded cabbage
- 1 cup julienned carrots
- 1 cucumber, julienned
- 1 block firm tofu, sliced into thin strips
- 1/2 cup roasted peanuts, crushed
- 1/4 cup fresh cilantro leaves
- 1/4 cup fresh mint leaves
- 1/4 cup fresh basil leaves
- Gado Gado peanut sauce for dipping
Instructions
- Prepare all the vegetables and tofu for the filling.
- Soak a spring roll wrapper in warm water for a few seconds to soften.
- Place a small amount of each vegetable, tofu, and herbs in the center of the wrapper.
- Sprinkle with crushed peanuts.
- Roll the wrapper over the filling, tucking in the sides, and continue rolling tightly.
- Repeat with the remaining ingredients.
- Serve the spring rolls with Gado Gado peanut sauce for dipping.
