Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced

- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 can (14 oz) kidney beans, drained and rinsed
- 1 zucchini, diced
- 1 cup small pasta (such as ditalini or small shells)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Grated Parmesan cheese for serving (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the onion, carrots, and celery. Cook until the vegetables are tender, about 5 minutes.
- Add the garlic and cook for another minute.
- Stir in the diced tomatoes, vegetable broth, kidney beans, zucchini, pasta, oregano, and basil.
- Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the pasta and vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese if desired.
