Vegetarian Minestrone Soup

Ingredients

  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 1 zucchini, diced
  • 1 cup small pasta (such as ditalini or small shells)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery. Cook until the vegetables are tender, about 5 minutes.
  3. Add the garlic and cook for another minute.
  4. Stir in the diced tomatoes, vegetable broth, kidney beans, zucchini, pasta, oregano, and basil.
  5. Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the pasta and vegetables are tender.
  6. Season with salt and pepper to taste.
