Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup cold unsalted butter, diced
  • 1/2 cup cold water
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the flour and diced butter. Use your fingers to rub the butter into the flour until the mixture resembles breadcrumbs.
  2. Add the cold water and mix until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. In a large mixing bowl, combine the chopped onion, diced carrots, potatoes, frozen peas, dried thyme, dried rosemary, salt, and pepper. Mix well.
  5. Divide the dough into 6 equal portions and roll each portion into a circle on a floured surface.
  6. Place a generous amount of the vegetable filling on one half of each dough circle, leaving a border around the edge.
  7. Brush the edges of the dough with water, then fold the other half over the filling to enclose it. Press the edges together to seal and crimp with a fork.
  8. Place the pasties on a baking sheet lined with parchment paper and bake for 35-40 minutes, or until golden brown.
  9. Remove from the oven and let cool for a few minutes before serving.
