Vegetarian Pasties

Ingredients
- 2 cups all-purpose flour
- 1/2 cup cold unsalted butter, diced
- 1/2 cup cold water
- 1 onion, finely chopped
- 2 carrots, diced
- 2 potatoes, diced
- 1 cup frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- In a large bowl, combine the flour and diced butter. Use your fingers to rub the butter into the flour until the mixture resembles breadcrumbs.
- Add the cold water and mix until the dough comes together. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the chopped onion, diced carrots, potatoes, frozen peas, dried thyme, dried rosemary, salt, and pepper. Mix well.
- Divide the dough into 6 equal portions and roll each portion into a circle on a floured surface.
- Place a generous amount of the vegetable filling on one half of each dough circle, leaving a border around the edge.
- Brush the edges of the dough with water, then fold the other half over the filling to enclose it. Press the edges together to seal and crimp with a fork.
- Place the pasties on a baking sheet lined with parchment paper and bake for 35-40 minutes, or until golden brown.
- Remove from the oven and let cool for a few minutes before serving.
