Vegetarian Quiche Lorraine

Ingredients

  • 1 9-inch pie crust
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 cup sliced mushrooms
  • 1 cup shredded Gruyère cheese
  • 4 large eggs
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the pie crust in a 9-inch pie dish and crimp the edges.
  3. In a skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
  4. Add the sliced mushrooms to the skillet and cook until they release their moisture and become golden brown, about 8 minutes. Remove from heat and let cool slightly.
  5. Sprinkle the shredded Gruyère cheese over the bottom of the pie crust. Top with the cooked onions and mushrooms.
  6. In a bowl, whisk together the eggs and heavy cream. Season with salt and pepper. Pour the egg mixture over the cheese, onions, and mushrooms in the pie crust.
  7. Place the quiche in the preheated oven and bake for 35-40 minutes, or until the filling is set and the top is golden brown.
  8. Remove from the oven and let it cool for a few minutes before slicing and serving.
