Vegetarian Quiche Lorraine
Quiche Lorraine is a classic French dish that traditionally contains bacon, but this vegetarian version is just as delicious and satisfying. With a flaky crust and a creamy filling, this dish is perfect for brunch, lunch, or a light dinner.
Ingredients
- 1 9-inch pie crust
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 cup sliced mushrooms
- 1 cup shredded Gruyère cheese
- 4 large eggs
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Place the pie crust in a 9-inch pie dish and crimp the edges.
- In a skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 5 minutes.
- Add the sliced mushrooms to the skillet and cook until they release their moisture and become golden brown, about 8 minutes. Remove from heat and let cool slightly.
- Sprinkle the shredded Gruyère cheese over the bottom of the pie crust. Top with the cooked onions and mushrooms.
- In a bowl, whisk together the eggs and heavy cream. Season with salt and pepper. Pour the egg mixture over the cheese, onions, and mushrooms in the pie crust.
- Place the quiche in the preheated oven and bake for 35-40 minutes, or until the filling is set and the top is golden brown.
- Remove from the oven and let it cool for a few minutes before slicing and serving.
