Vegetarian Red Lentil Dal

Ingredients
- 1 cup red lentils
- 2 cups water
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse the red lentils under cold water until the water runs clear.
- In a large pot, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 15 minutes.
- While the lentils are cooking, heat some oil in a separate pan over medium heat. Add the onion, garlic, and ginger, and cook until softened.
- Stir in the turmeric, cumin, coriander, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Add the diced tomatoes and coconut milk to the pan. Simmer for 10 minutes.
- Combine the cooked lentils with the tomato and coconut milk mixture. Season with salt to taste.
- Serve the dal hot, garnished with fresh cilantro.
