Vegetarian Red Lentil Dal

Ingredients

  • 1 cup red lentils
  • 2 cups water
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the red lentils under cold water until the water runs clear.
  2. In a large pot, combine the lentils and water. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. While the lentils are cooking, heat some oil in a separate pan over medium heat. Add the onion, garlic, and ginger, and cook until softened.
  4. Stir in the turmeric, cumin, coriander, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  5. Add the diced tomatoes and coconut milk to the pan. Simmer for 10 minutes.
  6. Combine the cooked lentils with the tomato and coconut milk mixture. Season with salt to taste.
  7. Serve the dal hot, garnished with fresh cilantro.
