Vegetarian Spinach And Mushroom Lasagna

Ingredients

  • 9 lasagna noodles
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 (10-ounce) package frozen chopped spinach, thawed and drained
  • 1 (24-ounce) jar marinara sauce
  • 15 ounces ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
  4. Add the mushrooms, oregano, and basil. Cook until the mushrooms are tender.
  5. Stir in the spinach and marinara sauce. Simmer for 5 minutes. Season with salt and pepper to taste.
  6. In a separate bowl, combine the ricotta cheese and Parmesan cheese.
  7. Spread a thin layer of the spinach and mushroom sauce in the bottom of a 9x13-inch baking dish.
  8. Place 3 lasagna noodles on top of the sauce. Spread half of the ricotta cheese mixture over the noodles.
  9. Sprinkle 1 cup of mozzarella cheese over the ricotta layer.
  10. Repeat the layers, ending with the remaining mozzarella cheese on top.
  11. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 20 minutes, or until the cheese is bubbly and golden.
  12. Let the lasagna rest for 10 minutes before slicing and serving.
