Ingredients
- 9 lasagna noodles
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 (10-ounce) package frozen chopped spinach, thawed and drained
- 1 (24-ounce) jar marinara sauce
- 15 ounces ricotta cheese
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and cook until softened.
- Add the mushrooms, oregano, and basil. Cook until the mushrooms are tender.
- Stir in the spinach and marinara sauce. Simmer for 5 minutes. Season with salt and pepper to taste.
- In a separate bowl, combine the ricotta cheese and Parmesan cheese.
- Spread a thin layer of the spinach and mushroom sauce in the bottom of a 9x13-inch baking dish.
- Place 3 lasagna noodles on top of the sauce. Spread half of the ricotta cheese mixture over the noodles.
- Sprinkle 1 cup of mozzarella cheese over the ricotta layer.
- Repeat the layers, ending with the remaining mozzarella cheese on top.
- Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 20 minutes, or until the cheese is bubbly and golden.
- Let the lasagna rest for 10 minutes before slicing and serving.
