Vegetarian Spinach And Ricotta Cannelloni

Ingredients

  • 1 package (8 ounces) cannelloni tubes
  • 2 cups ricotta cheese
  • 2 cups chopped spinach, cooked and drained
  • 1 cup grated Parmesan cheese
  • 1 egg, lightly beaten
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the ricotta, spinach, Parmesan, and egg. Season with salt and pepper.
  3. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  4. Using a piping bag or a small spoon, fill the cannelloni tubes with the ricotta mixture and place them in the baking dish.
