Vegetarian Stuffed Bell Peppers

Ingredients

  • 4 large bell peppers, any color
  • 1 cup cooked rice
  • 1 cup diced tomatoes
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup diced onion
  • 1/2 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, combine the cooked rice, diced tomatoes, black beans, corn, onion, shredded cheese, cumin, chili powder, salt, and pepper.
  4. Stuff the bell peppers with the rice and vegetable mixture.
  5. Place the stuffed peppers in a baking dish and cover with foil.
  6. Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender and the filling is heated through.
  7. Remove from the oven and garnish with fresh cilantro before serving.
