Vegetarian Stuffed Mushrooms

Ingredients
- 12 large mushrooms, stems removed and reserved
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 red bell pepper, finely chopped
- 1/2 zucchini, finely chopped
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Chop the reserved mushroom stems and set aside.
- Heat the olive oil in a skillet over medium heat. Add the onion, garlic, and chopped mushroom stems, and cook until softened.
- Add the red bell pepper and zucchini to the skillet, and cook for an additional 2-3 minutes.
- Remove the skillet from the heat and stir in the breadcrumbs, Parmesan cheese, and parsley. Season with salt and pepper.
- Stuff each mushroom cap with the vegetable mixture and place them on a baking sheet.
- Bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the filling is golden brown.
