Vegetarian Stuffed Mushrooms

Ingredients

  • 12 large mushrooms, stems removed and reserved
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 red bell pepper, finely chopped
  • 1/2 zucchini, finely chopped
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Chop the reserved mushroom stems and set aside.
  3. Heat the olive oil in a skillet over medium heat. Add the onion, garlic, and chopped mushroom stems, and cook until softened.
  4. Add the red bell pepper and zucchini to the skillet, and cook for an additional 2-3 minutes.
  5. Remove the skillet from the heat and stir in the breadcrumbs, Parmesan cheese, and parsley. Season with salt and pepper.
  6. Stuff each mushroom cap with the vegetable mixture and place them on a baking sheet.
  7. Bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the filling is golden brown.
  8. Serve hot and enjoy!
