Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 small red onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 8 small flour tortillas
- 1 1/2 cups enchilada sauce
- 1 1/2 cups shredded cheese (use dairy-free cheese for vegan option)
- Fresh cilantro, for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat some oil over medium heat. Add the sweet potatoes and cook for 5 minutes.
- Add the black beans, bell pepper, onion, and garlic to the skillet. Stir in the cumin, chili powder, smoked paprika, and cayenne pepper. Season with salt and pepper. Cook for another 5 minutes, or until the vegetables are tender.
- Spread a thin layer of enchilada sauce on the bottom of a 9x13 inch baking dish.
- Divide the sweet potato and black bean mixture evenly among the tortillas. Roll up each tortilla and place seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the rolled tortillas, then sprinkle with shredded cheese.
- Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
