Vegetarian Tofu Stir Fry

Ingredients
- 1 block of firm tofu, drained and cubed
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch
- 1 tablespoon vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 3 green onions, chopped
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together the soy sauce, sesame oil, and cornstarch. Set aside.
- Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
- In the same skillet, add the bell peppers, broccoli, green onions, garlic, and ginger. Stir fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the tofu to the skillet and pour the soy sauce mixture over the tofu and vegetables. Cook for an additional 2-3 minutes, stirring gently to coat everything with the sauce.
- Season with salt and pepper to taste. Serve the tofu stir fry hot over cooked rice or noodles.
