Vegetarian Tofu Stir Fry

Ingredients

  • 1 block of firm tofu, drained and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together the soy sauce, sesame oil, and cornstarch. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook until golden brown on all sides. Remove the tofu from the skillet and set aside.
  3. In the same skillet, add the bell peppers, broccoli, green onions, garlic, and ginger. Stir fry for 3-4 minutes until the vegetables are tender-crisp.
  4. Return the tofu to the skillet and pour the soy sauce mixture over the tofu and vegetables. Cook for an additional 2-3 minutes, stirring gently to coat everything with the sauce.
  5. Season with salt and pepper to taste. Serve the tofu stir fry hot over cooked rice or noodles.
