Vegetarian Tomato Basil Soup

Ingredients
- 6 large tomatoes, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1/4 cup fresh basil leaves, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent.
- Add the chopped tomatoes, vegetable broth, oregano, and red pepper flakes to the pot. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
- Stir in the chopped basil and season with salt and pepper to taste. Let the soup simmer for an additional 5-10 minutes.
