Vegetarian Veggie Lo Mein

Ingredients

  • 8 oz lo mein noodles
  • 2 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, julienned
  • 1 yellow bell pepper, julienned
  • 1 cup snow peas
  • 1 cup shredded carrots
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 1 tsp sriracha (optional)
  • 1/4 cup chopped green onions

Instructions

  1. Boil the lo mein noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the sesame oil over medium-high heat. Add the minced garlic and cook for 1 minute.
  3. Add the julienned bell peppers, snow peas, and shredded carrots to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  4. In a small bowl, whisk together the soy sauce, hoisin sauce, and sriracha. Pour the sauce over the vegetables in the skillet.
  5. Add the cooked lo mein noodles to the skillet and toss to combine with the vegetables and sauce. Cook for an additional 2-3 minutes to heat through.
  6. Remove from heat and sprinkle with chopped green onions before serving.
