Vegetarian Veggie Quesadilla

Ingredients
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- 1 cup sliced mushrooms
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced bell peppers, onion, and mushrooms to the skillet. Cook for 5-7 minutes, or until the vegetables are tender.
- Season the vegetables with salt and pepper to taste.
- Place a tortilla in a separate large skillet over medium heat.
- Sprinkle 1/4 cup of shredded cheddar cheese over half of the tortilla.
- Top the cheese with a generous portion of the cooked vegetables.
- Fold the tortilla in half over the filling and press down gently.
- Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
- Repeat with the remaining tortillas and filling.
- Slice the quesadillas into wedges and serve hot.
