Vegetarian Veggie Quesadilla

Ingredients

  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 cup sliced mushrooms
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced bell peppers, onion, and mushrooms to the skillet. Cook for 5-7 minutes, or until the vegetables are tender.
  3. Season the vegetables with salt and pepper to taste.
  4. Place a tortilla in a separate large skillet over medium heat.
  5. Sprinkle 1/4 cup of shredded cheddar cheese over half of the tortilla.
  6. Top the cheese with a generous portion of the cooked vegetables.
  7. Fold the tortilla in half over the filling and press down gently.
  8. Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  9. Repeat with the remaining tortillas and filling.
  10. Slice the quesadillas into wedges and serve hot.
