Veggie Burger

Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cooked quinoa
- 1/2 cup finely chopped onion
- 1/2 cup bread crumbs
- 1/4 cup chopped fresh parsley
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 4 whole wheat burger buns
- Lettuce, tomato, and other desired toppings
Instructions
- In a large bowl, mash the black beans until thick and pasty.
- Stir in the quinoa, onion, bread crumbs, parsley, cumin, paprika, garlic powder, salt, and pepper.
- Divide the mixture into 4 equal parts and form into patties.
- Cook the patties in a lightly oiled skillet over medium heat for 5-7 minutes on each side, or until heated through and crispy on the outside.
- Assemble the burgers on the whole wheat buns with your favorite toppings.
