Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1/2 cup finely chopped onion
  • 1/2 cup bread crumbs
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 whole wheat burger buns
  • Lettuce, tomato, and other desired toppings

Instructions

  1. In a large bowl, mash the black beans until thick and pasty.
  2. Stir in the quinoa, onion, bread crumbs, parsley, cumin, paprika, garlic powder, salt, and pepper.
  3. Divide the mixture into 4 equal parts and form into patties.
  4. Cook the patties in a lightly oiled skillet over medium heat for 5-7 minutes on each side, or until heated through and crispy on the outside.
  5. Assemble the burgers on the whole wheat buns with your favorite toppings.
