Ingredients

  • 4 large tomatoes
  • 500g ground beef
  • 1 onion, finely chopped
  • 1/2 cup rice
  • 1/4 cup chopped parsley
  • 1/4 cup chopped mint
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the tomatoes and scoop out the pulp. Sprinkle the insides with salt and turn them upside down to drain.
  3. In a bowl, mix the ground beef, onion, rice, parsley, mint, olive oil, salt, and pepper.
  4. Stuff the tomatoes with the meat mixture and place them in a baking dish.
  5. Bake for 40 minutes or until the meat is cooked through and the tomatoes are tender.
