Ingredients
- 4 large tomatoes
- 500g ground beef
- 1 onion, finely chopped
- 1/2 cup rice
- 1/4 cup chopped parsley
- 1/4 cup chopped mint
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the tomatoes and scoop out the pulp. Sprinkle the insides with salt and turn them upside down to drain.
- In a bowl, mix the ground beef, onion, rice, parsley, mint, olive oil, salt, and pepper.
- Stuff the tomatoes with the meat mixture and place them in a baking dish.
- Bake for 40 minutes or until the meat is cooked through and the tomatoes are tender.
