Venetian Bacalà Mantecato

Ingredients

  • 500g salted cod
  • 1 liter milk
  • 2 cloves garlic, crushed
  • 200ml extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Soak the salted cod in water for 24 hours, changing the water 3 times.
  2. Place the cod in a pot with milk and garlic, and simmer for 15 minutes.
  3. Drain the cod and remove any bones and skin.
  4. Place the cod in a bowl and whip with olive oil until creamy.
  5. Season with salt and pepper to taste.
