Ingredients
- 500g salted cod, soaked and desalted
- 2 eggs
- 100g all-purpose flour
- 1/2 teaspoon baking powder
- 2 cloves garlic, minced
- 2 tablespoons parsley, chopped
- Salt and pepper to taste
- Vegetable oil for frying
Instructions
- Boil the desalted cod in water for 10 minutes, then drain and let it cool. Remove any bones and skin, then flake the cod into a bowl.
- In a separate bowl, beat the eggs and gradually add the flour and baking powder, mixing until smooth.
- Add the minced garlic, chopped parsley, and flaked cod to the egg mixture. Season with salt and pepper, and mix until well combined.
- Heat the vegetable oil in a deep pan. Take spoonfuls of the cod mixture and carefully drop them into the hot oil. Fry until golden brown and crispy, then drain on paper towels.
- Serve the Baccalà Mantecato Fritto hot, with a side of lemon wedges for squeezing.
