Venetian Salted Cod Fritters (Baccalà Mantecato Fritto)

Ingredients

  • 500g salted cod, soaked and desalted
  • 2 eggs
  • 100g all-purpose flour
  • 1/2 teaspoon baking powder
  • 2 cloves garlic, minced
  • 2 tablespoons parsley, chopped
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Boil the desalted cod in water for 10 minutes, then drain and let it cool. Remove any bones and skin, then flake the cod into a bowl.
  2. In a separate bowl, beat the eggs and gradually add the flour and baking powder, mixing until smooth.
  3. Add the minced garlic, chopped parsley, and flaked cod to the egg mixture. Season with salt and pepper, and mix until well combined.
  4. Heat the vegetable oil in a deep pan. Take spoonfuls of the cod mixture and carefully drop them into the hot oil. Fry until golden brown and crispy, then drain on paper towels.
  5. Serve the Baccalà Mantecato Fritto hot, with a side of lemon wedges for squeezing.
