Ingredients
- 2 cups all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 2 teaspoons instant yeast
- 1 cup lukewarm water
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 pound stewing beef, cubed
- 2 cups chopped tomatoes
- 1 cup beef stock
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large bowl, mix the flour, sugar, salt, and instant yeast. Add the lukewarm water and mix to form a dough. Knead the dough for 5-7 minutes until smooth and elastic. Cover and let it rise for 30 minutes.
- While the dough is rising, heat the vegetable oil in a pot over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the cubed beef to the pot and brown on all sides. Then, add the chopped tomatoes, beef stock, ground cumin, paprika, salt, and pepper. Bring to a simmer, cover, and cook for 45 minutes to 1 hour, or until the beef is tender and the sauce has thickened.
- Divide the risen dough into 12 equal portions and shape them into balls. Heat the oil for frying in a deep pot or pan over medium heat. Fry the dough balls in batches until golden brown and cooked through. Drain on paper towels.
- To assemble the sliders, cut each vetkoek in half and fill with a generous spoonful of the tomato bredie. Serve immediately.
