Ingredients

- 1/2 cup grated Gruyère cheese

Instructions
- In a large bowl, whisk together the flour, eggs, milk, salt, and nutmeg to form a smooth, thick batter.
- Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter through the holes directly into the boiling water. Cook for 2-3 minutes or until the spaetzle floats to the surface, then remove with a slotted spoon and transfer to a large bowl.
- In a large skillet, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 15-20 minutes.
- Preheat the oven broiler.
- Add the caramelized onions to the bowl of spaetzle, then add the grated Emmental and Gruyère cheese. Toss everything together until the cheese is melted and the spaetzle is well coated.
- Transfer the spaetzle mixture to a baking dish and place under the broiler for 3-5 minutes, or until the cheese is bubbly and golden brown.
- Season with salt and pepper to taste, then serve hot.
