Vietnamese Beef Stew (Bò kho)

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 carrots, peeled and cut into chunks
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 3 cups beef broth
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 1 tsp five-spice powder
  • 2 star anise
  • 1 cinnamon stick
  • Salt and pepper to taste
  • Chopped cilantro and green onions for garnish

Instructions

  1. In a large pot, heat some oil over medium-high heat. Add the onions and garlic, and cook until fragrant.
  2. Add the beef cubes and brown on all sides.
  3. Stir in the crushed tomatoes, beef broth, fish sauce, sugar, five-spice powder, star anise, and cinnamon stick. Season with salt and pepper.
  4. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
  5. Add the carrots to the pot and continue to simmer until the carrots are tender.
  6. Adjust the seasoning if needed. Serve the bò kho hot, garnished with chopped cilantro and green onions.
