Vietnamese Beef Stew (Bò kho)
Bò kho is a traditional Vietnamese beef stew that is hearty, flavorful, and perfect for a comforting meal. This dish is typically served with crusty bread or rice noodles, making it a versatile and satisfying option for any occasion.
Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 3 carrots, peeled and cut into chunks
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 3 cups beef broth
- 2 tbsp fish sauce
- 1 tbsp sugar
- 1 tsp five-spice powder
- 2 star anise
- 1 cinnamon stick
- Salt and pepper to taste
- Chopped cilantro and green onions for garnish
Instructions
- In a large pot, heat some oil over medium-high heat. Add the onions and garlic, and cook until fragrant.
- Add the beef cubes and brown on all sides.
- Stir in the crushed tomatoes, beef broth, fish sauce, sugar, five-spice powder, star anise, and cinnamon stick. Season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
- Add the carrots to the pot and continue to simmer until the carrots are tender.
- Adjust the seasoning if needed. Serve the bò kho hot, garnished with chopped cilantro and green onions.
