Vietnamese Cha

Ingredients

  • 1 lb ground pork
  • 2 cloves garlic, minced
  • 1 shallot, finely chopped
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1/2 tsp black pepper
  • 1/4 cup chopped fresh herbs (cilantro, mint, and/or basil)
  • 1/4 cup chopped green onions
  • 1/4 cup chopped peanuts
  • 1 head of lettuce, for serving
  • 1/4 cup dipping sauce (nuoc cham)

Instructions

  1. In a large bowl, mix together the ground pork, garlic, shallot, fish sauce, sugar, and black pepper.
  2. Form the mixture into small patties and cook in a skillet over medium heat until browned and cooked through, about 5-7 minutes per side.
  3. Once cooked, remove the patties from the skillet and let them rest for a few minutes.
  4. Assemble the cha by placing a lettuce leaf on a plate, adding a cha patty, and topping with chopped herbs, green onions, and peanuts.
  5. Serve with dipping sauce on the side.
