Vietnamese Chicken Curry (Cà ri gà)

Ingredients

  • 1.5 lbs (700g) chicken thighs, cut into bite-sized pieces
  • 2 potatoes, peeled and cut into chunks
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 can (14 oz) coconut milk
  • 2 cups chicken broth
  • 2 tbsp curry powder
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • Salt and pepper to taste
  • 2 tbsp cooking oil

Instructions

  1. Heat the cooking oil in a large pot over medium heat. Add the minced garlic and sliced onion, and sauté until fragrant.
  2. Add the chicken pieces to the pot and cook until they are no longer pink on the outside.
  3. Sprinkle the curry powder over the chicken and stir to coat evenly.
  4. Pour in the coconut milk and chicken broth. Add the potatoes, fish sauce, and sugar. Season with salt and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes, or until the chicken is tender and the potatoes are cooked through.
  6. Adjust the seasoning if needed, then serve the Cà ri gà hot with steamed rice or crusty bread.
