Ingredients
- 1.5 lbs (700g) chicken thighs, cut into bite-sized pieces
- 2 potatoes, peeled and cut into chunks
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 can (14 oz) coconut milk
- 2 cups chicken broth
- 2 tbsp curry powder
- 1 tbsp fish sauce
- 1 tbsp sugar
- Salt and pepper to taste
- 2 tbsp cooking oil
Instructions
- Heat the cooking oil in a large pot over medium heat. Add the minced garlic and sliced onion, and sauté until fragrant.
- Add the chicken pieces to the pot and cook until they are no longer pink on the outside.
- Sprinkle the curry powder over the chicken and stir to coat evenly.
- Pour in the coconut milk and chicken broth. Add the potatoes, fish sauce, and sugar. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes, or until the chicken is tender and the potatoes are cooked through.
- Adjust the seasoning if needed, then serve the Cà ri gà hot with steamed rice or crusty bread.
