Vietnamese Chicken Salad (Gỏi gà)

Ingredients

  • 2 boneless, skinless chicken breasts, cooked and shredded
  • 1 carrot, julienned
  • 1 cucumber, thinly sliced
  • 1 cup shredded cabbage
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup chopped roasted peanuts
  • 1/4 cup fried shallots
  • 1/4 cup sliced red onion
  • 1 red chili, thinly sliced (optional)

Instructions

  1. In a large bowl, combine the shredded chicken, carrot, cucumber, cabbage, mint, and cilantro.
  2. In a small bowl, whisk together the dressing ingredients: 3 tablespoons fish sauce, 2 tablespoons lime juice, 2 tablespoons sugar, and 1 minced garlic clove.
  3. Pour the dressing over the salad and toss to combine.
  4. Transfer the salad to a serving platter and top with chopped peanuts, fried shallots, sliced red onion, and red chili (if using).
  5. Serve the gỏi gà immediately and enjoy!
