Viking Feast (Víkinga veisla)
Víkinga veisla, or Viking Feast, is a traditional Icelandic meal that brings together the flavors of the land and sea. This hearty feast is perfect for gatherings and celebrations, and it's sure to transport you to the rugged landscapes of Iceland.
Ingredients
- 1.5 kg lamb shoulder, cut into chunks
- 500g potatoes, peeled and diced
- 3 onions, chopped
- 4 carrots, sliced
- 1 rutabaga, peeled and diced
- 1 leek, sliced
- 1/2 cup pearl barley
- 1/4 cup flour
- 1/4 cup butter
- 1.5 liters beef or vegetable broth
- 2 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat. Toss the lamb in the flour, then brown in the pot.
- Add the onions and leek, and cook until softened.
- Pour in the broth and bring to a boil. Reduce the heat and simmer for 1 hour.
- Add the potatoes, carrots, rutabaga, and barley. Simmer for another 30 minutes, or until the vegetables are tender.
- Season with thyme, salt, and pepper to taste.
