Viking Lamb Stew

Ingredients

  • 2 lbs lamb, cut into chunks
  • 3 large carrots, sliced
  • 2 onions, chopped
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tbsp flour
  • 2 tbsp butter
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the lamb chunks and brown on all sides.
  3. Sprinkle the flour over the lamb and stir to coat.
  4. Add the onions, carrots, and potatoes to the pot.
  5. Pour in the beef broth and red wine.
  6. Add the bay leaves and season with salt and pepper.
  7. Bring the stew to a boil, then reduce the heat and simmer for 2 hours, stirring occasionally.
  8. Remove the bay leaves before serving.
