Viking Lamb Stew

Ingredients
- 2 lbs lamb, cut into chunks
- 3 large carrots, sliced
- 2 onions, chopped
- 3 potatoes, diced
- 2 cups beef broth
- 1 cup red wine
- 2 tbsp flour
- 2 tbsp butter
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the lamb chunks and brown on all sides.
- Sprinkle the flour over the lamb and stir to coat.
- Add the onions, carrots, and potatoes to the pot.
- Pour in the beef broth and red wine.
- Add the bay leaves and season with salt and pepper.
- Bring the stew to a boil, then reduce the heat and simmer for 2 hours, stirring occasionally.
- Remove the bay leaves before serving.
