Viking-style Meatloaf

Ingredients

  • 1 1/2 pounds ground beef
  • 1/2 cup breadcrumbs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup milk
  • 1 egg
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1/2 cup lingonberry jam

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the ground beef, breadcrumbs, onion, garlic, milk, egg, Dijon mustard, thyme, rosemary, salt, and pepper until well combined.
  3. Transfer the mixture to a loaf pan and shape it into a loaf.
  4. Bake for 45-50 minutes, or until the meatloaf is cooked through.
  5. Spread the lingonberry jam over the top of the meatloaf and return to the oven for an additional 10 minutes.
  6. Let the meatloaf rest for 10 minutes before slicing and serving.
