Vilniaus Varenikai (vilnius Varenyky)

Ingredients

  • 2 cups all-purpose flour
  • 1 egg
  • 1/2 cup water
  • 1/2 tsp salt
  • 1 cup mashed potatoes
  • 1/2 cup cooked bacon, chopped
  • 1/2 cup onion, finely chopped
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix the flour, egg, water, and salt to form a dough. Knead the dough until smooth, then cover and let it rest for 15 minutes.
  2. In a separate bowl, combine the mashed potatoes, cooked bacon, and chopped onion. Season with salt and pepper to taste.
  3. Roll out the dough on a floured surface and cut it into circles using a cookie cutter or a glass.
  4. Place a spoonful of the potato filling in the center of each circle, then fold the dough over the filling and seal the edges.
  5. Bring a large pot of salted water to a boil and cook the varenikai in batches for about 5-7 minutes, or until they float to the surface.
