Ingredients
- 1 lb mixed dried fruit
- 1 cup rum
- 1 cup butter
- 1 cup brown sugar
- 4 eggs
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp mixed spice
- 1/2 cup breadcrumbs
- 1/4 cup cherry brandy
Instructions
- Soak the mixed dried fruit in rum overnight.
- Cream the butter and sugar together in a bowl.
- Beat in the eggs one at a time.
- Sift the flour, baking powder, and mixed spice together.
- Fold the flour mixture into the creamed butter and sugar.
- Add the soaked fruit and breadcrumbs to the mixture.
- Stir in the cherry brandy.
- Pour the batter into a greased and lined cake tin.
- Bake in a preheated oven at 325°F for 2-3 hours.
- Allow the cake to cool before serving.
