Ingredients

  • 1 lb mixed dried fruit
  • 1 cup rum
  • 1 cup butter
  • 1 cup brown sugar
  • 4 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp mixed spice
  • 1/2 cup breadcrumbs
  • 1/4 cup cherry brandy

Instructions

  1. Soak the mixed dried fruit in rum overnight.
  2. Cream the butter and sugar together in a bowl.
  3. Beat in the eggs one at a time.
  4. Sift the flour, baking powder, and mixed spice together.
  5. Fold the flour mixture into the creamed butter and sugar.
  6. Add the soaked fruit and breadcrumbs to the mixture.
  7. Stir in the cherry brandy.
  8. Pour the batter into a greased and lined cake tin.
  9. Bake in a preheated oven at 325°F for 2-3 hours.
  10. Allow the cake to cool before serving.
