Ingredients
- 1 large breadfruit, peeled and diced
- 1 onion, finely chopped

- 1 bell pepper, diced
- 1 cup coconut milk
- 2 tbsp butter
- Salt and pepper to taste
- 2 cups all-purpose flour
- 1/2 cup cold water
Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, combine the diced breadfruit, onion, garlic, bell pepper, coconut milk, and butter. Season with salt and pepper. Cook over medium heat for 15 minutes, or until the breadfruit is tender.
- While the breadfruit mixture is cooking, prepare the pie crust. In a mixing bowl, combine the flour and cold water. Knead the dough until it forms a smooth ball.
- Divide the dough in half. Roll out one half to fit the bottom of a pie dish. Pour the cooked breadfruit mixture into the pie crust.
- Roll out the remaining dough and place it over the filling. Pinch the edges to seal the pie.
- Bake the pie in the preheated oven for 25-30 minutes, or until the crust is golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
