Vindaloo Tacos (spicy Vindaloo Tacos)

Ingredients
- 1 lb boneless chicken, cut into small pieces
- 2 tbsp vindaloo paste
- 1 onion, finely chopped
- 1 bell pepper, sliced
- 1/2 cup tomato puree
- 1/4 cup plain yogurt
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- Salt to taste
- 8 small flour tortillas
- Chopped cilantro, for garnish
Instructions
- In a large skillet, heat some oil over medium heat. Add the chopped onion and bell pepper, and cook until softened.
- Add the chicken pieces to the skillet and cook until browned.
- Stir in the vindaloo paste, cumin powder, coriander powder, turmeric powder, and salt. Cook for 2-3 minutes.
- Pour in the tomato puree and simmer for 10 minutes, or until the chicken is cooked through.
- Remove the skillet from the heat and stir in the plain yogurt.
- Warm the flour tortillas in a separate skillet or in the microwave.
- Divide the vindaloo chicken mixture among the tortillas and garnish with chopped cilantro.
- Serve the Vindaloo Tacos hot and enjoy!
