Vindaloo Tacos (spicy Vindaloo Tacos)

Ingredients

  • 1 lb boneless chicken, cut into small pieces
  • 2 tbsp vindaloo paste
  • 1 onion, finely chopped
  • 1 bell pepper, sliced
  • 1/2 cup tomato puree
  • 1/4 cup plain yogurt
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 8 small flour tortillas
  • Chopped cilantro, for garnish

Instructions

  1. In a large skillet, heat some oil over medium heat. Add the chopped onion and bell pepper, and cook until softened.
  2. Add the chicken pieces to the skillet and cook until browned.
  3. Stir in the vindaloo paste, cumin powder, coriander powder, turmeric powder, and salt. Cook for 2-3 minutes.
  4. Pour in the tomato puree and simmer for 10 minutes, or until the chicken is cooked through.
  5. Remove the skillet from the heat and stir in the plain yogurt.
  6. Warm the flour tortillas in a separate skillet or in the microwave.
  7. Divide the vindaloo chicken mixture among the tortillas and garnish with chopped cilantro.
  8. Serve the Vindaloo Tacos hot and enjoy!
